Cupcakes Made With Bunny Peeps
Sweet, marshmallowy Peeps are a holiday classic, with bunnies popular in the spring. Cupcakes made with bunny peeps are a cute and playful addition to your Easter celebration. Peeps cupcakes look harder to make than they are, and can double as a centerpiece or party decoration for any springtime event.

The Cupcake
Make your Peep cupcakes from scratch or a boxed mix -- or purchase Peep cupcakes like RedEnvelope's Vanilla Bean Cupcakes. Prepare your cupcake batter according to your recipe or the box mix instructions. Bake regular or extra large cupcakes using paper or foil liners for each cupcake. Vanilla, chocolate or lemon cupcakes work well for Peep cupcakes, but feel free to use your favorite flavor.
Frosting
Choose a white or cream-colored frosting and use it as is or tint a grassy green with food coloring. Opt for a classic buttercream-style frosting, or carry on the Peep flavor theme with a marshmallow cream cheese frosting. Pipe frosting onto the cupcake with a piping bag and a large round tip, or fill a plastic zipper bag with frosting and snip off one corner to pipe frosting onto the cupcake. Cover the entire top of the cupcake generously with frosting.
Decoration
Decorate your Peep cupcakes with shredded coconut or colored sugar. Combine shredded coconut and green food coloring, then apply along the edges or on the entire top of your Peep cupcake. Tinted, shredded coconut creates a grassy nest for your bunny Peep. If you'd prefer not to use coconut, dust the cupcake with colored sanding sugar to match your Peeps bunnies.
Finishing
Insert a toothpick or small skewer into the marshmallow bunny Peep. Press the free end of the toothpick into the cupcake, placing the bunny into the center of the icing nest. Add a few jellybean eggs if desired. Use bunnies in all one color or several colors, then display your Peep cupcakes on cake stands, tiered cake stands or a cupcake stand, like RedEnvelope's Ceramic Cupcake Stand.
